Its the simple things in life...

Allow me to introduce you to my favorite sandwich of the moment. A glorious homemade hummus, veggie creation that makes me look forward to lunch everyday.
The ingredients are simple: hummus, cucumbers, sprouts, tomatoes, and banana peppers and yes, the banana peppers are a must.
I'll give you the homemade hummus recipe: it's a crowd pleaser.
1 can of chick peas
4-5 cloves of garlic
1 lemon
a few dashes of salt
1/3 cup of extra virgin olive oil
Add them in your food processor and adjust salt/oil/lemon/garlic as needed. I cook without measurements, just taste as you go and you'll never get the same meal twice.
Also, my husband is sweet. He picked flowers from our backyard and left them in the kitchen for me. I cherish the small gestures. Love you babe!

Who wants a new recipe?

First I must make a recommendation about a cook book that I use time and time again because of the freshness and simplicity of each recipe. Of course it's from Martha.

Last night we had Drew and Jo over for dinner. Jo destroyed her oven/microwave and has been cooking dinner in a toaster oven for 13 days. We wanted to spend some time with these two and give them a break from turkey sandwiches. So we grilled turkey burgers!

If you're looking to spice up your life through a meal, I recommend grilling this. It's juicy and delicious and you'll want to make it again.
*If your husband is anything like mine he'll say something like "I just don't understand why we can't use beef" but once he starts to eat it he'll tell you "great job".

Guacamole

Guac.
If there is one thing I actually take joy in making, it's guacamole. I could eat guac almost everyday, at least every other day, and my love of it would not be diminished. People seems to like mine, so I'll share it with you.

First things first. I highly recommend buying molcajete which is a bowl made from lava rock that crushes and grinds the ingredients to enhance the flavor. Mine is a Christmas present from Mexico, but luckily Target carries something similar.

Here are the ingredients:

Chop your onions, jalapenos and cilantro. Mash/grind them in in molcajete {i believe this is the step that separates this guac from the ones made in a blender}

slice your avocados

add in tomatoes, lime and salt


and enjoy! this was our dinner last night.

Food.

The refrigerator went in yesterday!!!!!!!!! It's a beauty. Not to brag but she's really really good looking and I'm so glad to have her in our house- serving the family.

We still need to wait on the floors to be re-stained and then they have to dry, so it will take a few more days until I can actually use my appliances.

In the meantime, the in-between time, I've been looking at a few recipes that I want to try out for the summer:

I'm going to be hosting some dinner parties to celebrate the kitchen {and to repay our friends and family who have graciously had us over for dinner while we have been without appliances}

Note to self: it's not smart to look at delicious food around lunchtime. The images tell me I'm starving and want a cold beverage.
